I have been working on culinary video productions with Hollywood celebrities who enjoy cooking. Last week I was introduced to a well known actress and mom who is particularly passionate about good healthy food and cooking for her children. I can’t mention her name at this moment but after spending the entire day with her on set, I got to enjoy and respect her culinary spirit and knowledge. She created her own recipes, knew how to work through culinary problems, develop trusted solutions, and come up with simple tips that every busy mom could use.
I particularly liked how she created her healthy and yummy banana pancakes recipe. I always thought that banana pancakes made from scratch seem little ambitious for a regular breakfast for a busy family. Here are her tips and recipe.
She divided the recipe into two separate stages. At the end of the day, it’s actually a really easy dish to prep, and you can have it ready to go any morning you want. According to her, the key is in the prep work – night time is much calmer than the mornings. So she uses that time of (relative!) peace and quiet to get a lot done! She whips up her own healthy dry pancake mix so when things are hectic in the morning, most of the work is already finished.
She says that you can keep the dry mix out on your shelf in a pretty mason jar or store it in your pantry in simple plastic container. The busy celebrity mom often doubles or even triples the amount of mix for larger portions since it can be stored for a good period of time and used over the course of many weeks whenever she or her kids feel like pancakes. All she does is add few wet ingredients, mix everything together and voila! What I like best is that the celebrity mom does not add any extra sugar because the natural maple syrup she pours over the pancakes has enough sweetness.
I tried her recipe on set and the recreated it at home. It’s very delicious and this is another reason why I am sharing it with you.
Home Made Hollywood Celebrity Mom Pancakes
Ingredients:
Make dry mix
- 1 1/2 cups Spelt flour (or whole wheat)
- 2 tsp baking soda
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- Mix all the dry ingredients together and store in glass jar or plastic container.
(You can multiply the recipe by 4 so you always have homemade pancakes ready to go).
Pancakes batter
- 1 banana
- 1 Tbs butter, melted
- 2 eggs
- 1 1/4 cup milk (can be substituted with soy or almond milk)
- 1 tsp vanilla
- extra butter (for frying pan)
- In a bowl, smash the banana, add melted butter, the egg, milk and vanilla. Mix until incorporated. Add in your dry ingredients, stir until well mixed.
- In a buttered, heated skillet or griddle, pour out batter to make pancakes sized to your preference.
