Get ready for Mad Men’s final season with these modern cookies

The last season of Mad Men starts this Sunday, and well… Not sure about you, but I am definitely going to shed a tear (or two) and need some serious comfort food to get me out of this funk. And no, the average potato chip just is not going to cut it. I will be keeping mid-century mod alive by baking some yummy shortbread cookies. If you aren’t too bummed to invite some friends over, throw a party and watch the final season premiere (rip) while your homies go MAD over your fresh baked cookies!

Orange Earl Gray Shortbread Cookies

Shopping List (makes approximately 20 round cookies 2-2.5 in diameter):

  • 1 1/2 cups all purpose flour
  • 3/4 cup oat flour (or finely ground oats)
  • 3/4 cup powder cane sugar
  • 1/2 teaspoon coarse salt
  • 2 cups unsalted butter (diced)
  • 3 teaspoon fine Earl Gray tea
  • Zest of two large oranges
  • 3 tablespoon of finally chopped dark chocolate (70% and up)
  • 1 tablespoon dark chocolate cut into thin strips (for decorating)

Now follow these steps:

  1. Preheat the oven to 350°F.
  2. Place the flours, sugar, Earl Gary tea and salt into the food processor’s work bowl, and pulse to combine (you can use mixer with the hook attachment or your own hands if you don’t have any machine).
  3. Add the butter pieces, orange peel, chopped chocolate and process until the dough starts to come together in large clumps.
  4. Press the dough into the greased cookie pan and flatten it out (the dough should be about 1/4” high); marked desired shapes in the raw dough using cookie cutter, trying to fit as many cookies as possible (don’t waste space between them); liberally sprinkle strips of chocolate on the top of the cookies (refer to picture).
  5. Bake the shortbread for 30 to 35 minutes (until firm and golden brown).
  6. Remove the shortbread from the oven, and after 5 minutes turn it out of the pan onto a piece of parchment or a clean work surface. Cut all the way through the score marks and place the individual cookies on a rack to cool completely.
